Place 12 ounces of extra-large shrimp into a bowl. Season with 1 teaspoon sweet jalapeño rub, 1 teaspoon paprika, ½ teaspoon onion powder, ½ teaspoon garlic powder, and ¼ teaspoon seasoned salt. Toss until the shrimp are evenly coated.
Cook the eggs first
Heat about ½ tablespoon oil in a wok or large skillet over medium-high heat. Add 4 beaten eggs and scramble until fully cooked. Break them into small pieces, then remove from the pan and set aside.
Cook the shrimp
Add about 1 tablespoon oil to the same wok. Once hot, add the seasoned shrimp in a single layer. Cook for about 1–2 minutes per side, or until the shrimp are pink, opaque, and cooked through. Remove from the pan and set aside.
Sauté the vegetables
