The ranch isn’t an afterthought here. Fresh lime juice, cilantro, and seasonings create a creamy sauce that’s bright, tangy, and packed with flavor. It ties all of the ingredients together and gives the tacos a bold finish.
Crispy, Cheesy, and Loaded with Flavor
These tacos aren’t simply filled and served. Toasting them in a skillet creates a crispy exterior while melting the cheese into the filling. Combined with smoky bacon, seasoned proteins, and fresh cilantro, every bite delivers multiple layers of texture and flavor.
STEP INSTRUCTIONS FOR CHICKEN BACON (AND SHRIMP) RANCH TACOS
Prepare the chipotle lime ranch
Add ½ cup mayo, ¼ cup sour cream, ¼ cup milk, the juice of 2 limes, 2 tablespoons ranch seasoning, 1 teaspoon garlic powder, 1 teaspoon ground thyme, ½ teaspoon MSG (if using), and ¼ cup chopped cilantro to a blender. Blend until completely smooth and creamy. If using an immersion blender, blend directly in a tall container. Refrigerate while preparing the tacos.
Season the proteins
In a small bowl, combine 1½ teaspoons smoked paprika, 1½ teaspoons cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon seasoned salt, and ½ teaspoon black pepper. Place the diced chicken thighs and shrimp into separate bowls and drizzle lightly with olive oil. Divide the seasoning mixture evenly between the chicken and shrimp and toss until coated.
Cook the bacon
Heat a large skillet over medium heat. Add 6 chopped bacon strips and cook until crispy, about 6–8 minutes. Remove the bacon and place on a paper towel-lined plate, leaving a little of the rendered bacon fat in the pan.
Cook the chicken
Add the seasoned chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until fully cooked and lightly browned. Remove and set aside.
Cook the shrimp
Add the seasoned shrimp to the skillet and cook for about 1–2 minutes per side until pink, opaque, and cooked through. Remove from the skillet.
Build the tacos
Lay out the street-sized flour tortillas. Add shredded cheese to one side of each tortilla, followed by the cooked chicken, bacon, shrimp, and chopped cilantro.
Toast until crispy
Add a small amount of oil to the skillet. Fold or press the tacos together and cook over medium heat until golden brown and crispy on both sides and the cheese has melted.
Serve and enjoy
Serve immediately with the chipotle lime ranch drizzled over the tacos or on the side for dipping.

- Heat a large skillet over medium heat and cook the chopped bacon until crispy.
- Remove and set aside.
- In the same skillet, cook the seasoned chicken until fully cooked and lightly browned.
- Remove and set aside.
- Add the seasoned shrimp to the skillet and cook until pink and opaque.
- Remove from the pan.
- Add cheese to one side of each street taco tortilla.
- Top with chicken, bacon, shrimp, and cilantro.
- Add a little oil to the skillet and cook the tacos until golden brown and crispy on both sides and the cheese is melted.
- Serve hot with the chipotle lime ranch on the side or drizzled over the tacos.
