Form and Season the Burgers

Divide the ground beef into four equal portions and shape them into burger patties slightly larger than your buns since they will shrink during cooking. Season both sides generously with salt and black pepper.

Cook the Mustard-Grilled Burgers

Ingredients
  

  • 1 lb ground beef
  • 4 slices bacon
  • 4 slices cheese I used sharp cheddar
  • 1/2 cup heavy whipping cream
  • 1/2 yellow onion diced
  • 2 jalapenos sliced
  • 1/8 cup sharp cheddar cheese shredded
  • 4 tbsp mustard for burger grilling
  • 1/2 tbsp white cooking wine
  • 1/2 tbsp flour
  • 1/2 tbsp salted butter
  • 1/2 tbsp hot sauce
  • 2 tsp vegetable oil
  • 1/4 tsp sugar
  • black pepper pinch
  • salt pinch
  • burger sauce see recipe below
  • shredded cheese for toppings
  • tomato sliced for toppings
  • pickles for toppings
Burger Sauce
  • 1/4 cup mayo
  • 1 1/2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp dill relish
  • 1/2 tbsp pickle juice
  • 1/2 tbsp worcestershire
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 season salt
  • 1/4 black pepper

Method
 

Cook the Bacon
  1. Place a skillet over medium heat (about 350°F).
  2. Add the bacon slices in a single layer and cook for 6–8 minutes, flipping halfway, until crispy.
  3. Transfer the bacon to a paper towel–lined plate and set aside.
  4. Reserve about 1 teaspoon of the bacon grease in the skillet for flavor.
Caramelize the Jalapeños and Onions
  1. Thinly slice the yellow onion and jalapeños.
  2. In the same skillet with the bacon grease, add 1 teaspoon of vegetable oil and heat over medium heat.
  3. Add the onions and jalapeños with a pinch of salt and cook for 6–8 minutes, stirring occasionally, until softened.
  4. Add the sugar and continue cooking 3–4 minutes until lightly caramelized.
  5. Deglaze the pan with white cooking wine, stirring for 1 minute until the liquid reduces.
  6. Remove from the skillet and set aside.
Make the Queso Base
  1. In a skillet over medium heat, melt the butter with 1 teaspoon of vegetable oil.
  2. Stir in the flour and cook 1–2 minutes to form a light roux.
  3. Slowly whisk in the heavy cream, stirring constantly until smooth. Add the shredded cheddar, hot sauce, a pinch of black pepper, and a pinch of salt.
  4. Continue stirring until the cheese melts and the queso becomes smooth and thick.
Prepare the Burger Patties
  1. Divide the ground beef into four equal patties. Season both sides with salt and black pepper.
Cook the Mustard-Grilled Burgers
  1. Heat a skillet or griddle over medium-high heat (about 400°F). Spread about 1/2 tablespoon of mustard on one side of each patty.
  2. Place patties mustard-side down and cook 3–4 minutes.
  3. Spread mustard on the second side, flip, and cook another 3–4 minutes.
  4. Add one slice of cheddar to each patty during the last minute so it melts.
Assemble the Double Burgers
  1. Stack two patties together, on top of bottom buns (toast buns if preferred) with bacon between them to form two double bacon cheeseburgers.
  2. Add caramelized jalapeños and onions, sliced tomatoes, pickles, shredded cheese, and burger sauce if desired. Finish with a top bun and cut in half.
Build the Skillet
  1. Heat the queso until bubbly in the oven on a high broil. Place the burgers on top of the molten and bubbling cheese pool.
Finish & Serve
  1. Serve immediately while the cheese is sizzling.
